Fuelled by the Tattooed Sailor Coffee Roasters, Cairns Coffee School is the latest adventure of Ian and Olly. In pursuit of the perfect cup of coffee, these two over-caffeinated bean geeks saw an opportunity to share what they’ve learnt so far, first through roasting delicious filter and espresso blends, and now showing others how to get the most of out the bean.
Hailing from Brisbane, Ian’s career in the Royal Australian Navy saw him travel the world for several decades. An advocate for social justice, accessibility and inclusivity, he sees good food and coffee as a universal medium capable of empowering and uplifting individuals and communities. The Tattooed Sailor Coffee Roasters is his latest project marrying these ideas with good old-fashioned fun.
After meeting in Caffiend, Ian was one of Olly’s students, and they bonded over quality food, excellent coffee, drinking rum and breaking things. Although he’s been pouring shots for 25 years, Olly got serious about coffee 7 years ago. His teaching approach is all hands on deck, with quite a few notches under his belt.
